Bean Goulash & Bean Soup - Alice Kuhar's Recipes

1-1/2 lbs. dried beans
4 onions, chopped
2 cloves garlic, chopped
1 lb. smoked pork meat
1 1b.- fresh pork stew meat
3 tablespoons shortening
1 teaspoon paprika
2 bay leaves
1 carrot, grated
Salt to taste
2 tablespoons tomato paste
Soak the dried beans overnight. The next morning, drain beans. Cover beans with water; Add smoked meat and boil in slightly salted water until beans and meat are tender. In a Dutch oven, brown fresh pork stew meat in hot shortening. Add onion and garlic. When onions are translucent, add the paprika, bay leaves, and grated carrot; cook until meat is tender. Drain the cooked beans with smoked pork meat; add this cooked pork stew meat mixture and add tomato paste. Bring mixture to a boil and simmer slowly until flavors are blended.

1 lb. beans

2-3 cloves garlic, minced
2-3 potatoes, chopped
1 turnip, peeled & sliced
1-1/4 lbs. smoked pork ribs
3-1/2 tablespoons lard or oil
Cover beans with cold water. Bring to a boil; drain. Cover with boiling water; cook until tender. Cover meat with water in a second saucepan; simmer until tender. Fry sliced turnip, chopped onions, potatoes, paprika and parsley in lard or oil until tender. Combine cooked beans, meat with broth and vegetables. Reheat and simmer. Sliced cooked smoked sausages may be added.
