Veggie Burgers & Bean Burgers - Recipes

VEGGIE BURGERS
(Diann Weiss)
Ingredients:
1 cup chopped onions
1 cup grated carrots
1 cup chopped mushrooms
1 cup chopped green pepper
3 cups grated zucchini
2 eggs
Garlic salt & pepper to taste
Bread crumbs
3 tablespoons Worcestershire sauce
Directions:
Combine onions, carrots, mushrooms, peppers and zucchini. Add eggs, garlic salt, pepper, Worcestershire sauce and enough bread crumbs to hold mixture together. Shape into 5 or 6 patties. Spray a skillet with non-stick spray and cook patties over low heat until well browned; turn over and brown other side, waking sure they are heated through.
VARIATION. If desired top patty with cheese and heat until melted. Serve on bun with onion, tomato and lettuce.

BEAN BURGERS
(Diann Weiss)
Ingredients:
1 can (16 oz.) white navy beans
1 can (16 oz. ) butter beans
1 can (16 oz.) pinto beans
1 large green pepper, chopped
1 large onion, chopped
2 eggs
Bread crumbs
Salt & pepper to taste
2 tablespoons Worcestershire sauce
Directions:
Rinse and drain the navy, butter and pinto beans under cold running water. Mash the beans with a potato masher; add pepper, onion, eggs, Worcestershire sauce, salt, pepper, and enough bread crumbs to hold mixture together. Form into 12 patties. Spray skillet with non-stick spray, cook patties over low heat until well browned on first side. about 10 to 15 minutes. Turn and brown other side.
VARIATION: If desired top patty with cheese and heat until melted. Serve on bun with onion, tomato and lettuce.
