Broccoli Rice Casserole - Alice Kuhar's Recipes

| BROCCOLI RICE CHEESE CASSEROLE |
Ingredients
20 oz. frozen chopped broccoli, thawed & drained well
|
1/4 cup (1/2) stick butter or Margarine
|
1-1 /2 cups uncooked Minute rice
|
1 cup chopped onion
|
1 cup chopped celery
|
2 cans undiluted cream of mushroom or cream of celery soup
|
1 cup grated Cheddar cheese and/or buttered bread crumbs
|
1 jar (8 oz.) Cheez Whiz
|

Directions:
In large saucepan, sauté onion and celery in butter until soft. Stir in Cheez Whiz until mixture is creamy. Add Minute rice, broccoli and undiluted soup; stir and simmer over low heat about 3-5 minutes. Place mixture into a 9x13-inch casserole baking dish. Sprinkle with grated Cheddar cheese and buttered bread crumbs. Cover with foil and bake at 350 degrees for 40 minutes, removing foil after 20 minutes.
Variations:
- You may omit grated cheddar cheese adding only buttered bread crumbs. Cover with foil and bake 20 minutes; remove foil and bake 20 minutes more.
- You can sprinkle the dish with grated Cheddar cheese only, and cover with foil and bake at 350 degrees for 40 minutes, removing foil after 20 minutes.
- Omit cheddar cheese or bread crumbs. Cover with foil and bake at 350 degrees for 20 minutes. Remove foil and bake 20 minutes more. Sprinkle with crushed potato chips.

You may substitute 2 cups grated cheddar cheese instead of Cheez Whiz.
