HONEY BAKED CHICKEN
|
Ingredients:
1/4 cup butter
|
1/2 cup honey, room temperature
|
1/4 cup Dijon Mustard
|
1/2 teaspoon salt
|
1 frying chicken (3 lbs.), cut up (or 3 lbs. of cut up chicken pieces)

Directions:
In a 3-quart baking dish, melt the butter in the oven. Add the honey, mustard, and salt and stir to blend. Coat both sides of the chicken pieces with the honey mixture and arrange skin side down in the baking dish. Bake in a preheated 375 degree oven for 30 minutes, turn skin side up. Baste with honey mixture, continue baking until chicken is tender, about 30 minutes longer. Baste again and serve at once.

BAKED CHICKEN LEGS
(Diet Chicken)

Ingredients:
6 chicken drumsticks
|
6 chicken thighs
|
Dijon-style mustard
|
Salt & Pepper to taste, as desired
|
1/2 cup buttermilk
|
1-1/2 cups dry bread crumbs
|
|
Directions:
Preheat oven to 400 degrees. Remove chicken skin; wash chicken and pat dry. Brush lightly with mustard. Sprinkle with salt and pepper. Dip each piece in buttermilk, drain excess, and coat with fine dry bread crumbs. Arrange pieces on an ungreased baking sheet, cover with a sheet of foil. Bake 30 minutes. Uncover and bake 15 to 20 minutes longer until golden brown and tender when tested with a fork.
