DIABETIC APPLESAUCE CUPCAKES
|
Ingredients:
1 cup flour
|
1-1/2 teaspoons cinnamon
|
1/2 teaspoon baking soda
|
1/4 teaspoon salt
|
1/4 teaspoon nutmeg
|
1/4 teaspoon ginger
|
1/4 teaspoon cloves
|
1/8 teaspoon allspice
|
1/2 cup raisins
|
1/2 cup unsweetened applesauce
|
1/4 cup shortening, melted (or oil)
|
1 unbeaten egg
|
1 teaspoon vanilla
|
1 teaspoon liquid artificial sweetener
|

Directions:
Stir well together flour, cinnamon, baking soda, salt, nutmeg, ginger, cloves and allspice. Stir in raisins. In a small bowl, combine applesauce, shortening, egg, vanilla and sweetener. Blend well. Add to dry mixture all at once. Stir only until ingredients are moistened. Fill muffin tins, lined with paper baking cups, half full. Bake at 350 degrees for 20 to 25 minutes.

DIABETIC YOGURT CREAM FROSTING

Ingredients:
1 pkg. (8 oz.) low calorie cream cheese, softened
|
1/2 cup plain lowfat yogurt
|
14 packets Equal
|
1 teaspoon dried lemon peel
|
1 teaspoon vanilla extract
|
|
Directions:
Combine cream cheese and yogurt; blend until smooth. Stir in remaining ingredients; chill before using. Makes 2 cups, 39 calories per serving. Diabetic exchange: 1 fat.
