Farina Struklji - Alice Kuhar's Recipes

(Milena Gobets) (Struklji without dough) (from POTS and PANS COOKBOOK)
1 stick (1/4 pound) butter, at room temperature
1 cup regular Farina or cream of wheat
1 carton (16 ounces) creamed cottage cheese
3/4 cup sugar
4 eggs
1 teaspoon salt
6 slices of bread, cubed
Few raisins, optional
In a large kettle or roaster, bring to boil about 4 quarts water with 2 teaspoons salt added.With wooden spoon, mix together the butter, sugar, Farina or cream of wheat, eggs and salt. Add cottage cheese and cubed bread (if you slice the bread while it is still frozen, you can make very small cubes). If desired, stir in raisins. Let the mixture stand for a few minutes.

Wet a linen towel (about 30 inches long). Spoon mixture close to one long edge on towel, 2 inches from end. Form a 26-inch roll. Wrap roll in towel and tie with string at one end. Place in boiling water and cook, covered, for 20 minutes; keep water boiling gently.

Remove roll; drain and cut into 1 or 2-inch slices; top with browned bread crumbs.

*** NOTE: If you use instant Farina, the cooking time is about 15 minutes,

(Milena says, "We like it served with homemade vegetable soup and apple sauce or fruit compote.")
