Fried Potatoes - Alice Kuhar's Recipes

1/4 cup bacon fat or shortening
1 cup sliced onion Salt & Pepper
4 cups sliced, raw peeled potatoes
salt & pepper
Feel raw potatoes, and slice 1/4 inch thick. Heat bacon fat in covered skillet. Arrange onions and potatoes in the fat, then sprinkle with salt and pepper. Saute, covered, over low heat for 15 minutes. Then remove cover, turn up the heat to medium and saute
10 minutes longer or until potatoes are brown and crusty, turning occasionally. Serves 3-4. Sprinkle parsley if desired. Onions may be omitted if preferred.

6 medium potatoes
1 medium onion, thinly sliced
1/4 cup lard or shortening
1 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon chives, if desired
Wash and boil unpeeled potatoes until almost tender. Cool, peel and slice. In skillet, saute sliced onion in lard or shortening until soft. Add potatoes, salt, pepper and chives and fry over low heat for about 15 minutes until potatoes are lightly browned, turning
