Potato Dumplings & Halusky - Alice Kuhar's Recipes

(Favorite Sokol Recipes)
3 large or 4 medium potatoes
2 cups flour
1 teaspoon salt
1/2 cup farina
1 egg
1 large onion
1 stick margarine
1-1/2 cups bread crumbs
Cook potatoes, then peel and put them through a ricer or mash them. Add flour, salt, farina, and egg. Work dough until smooth, then make a roll about 1 inch in diameter. Cut into 1/ 2 inch slices and roll between your hands to make the size of your thumb. Boil 10minutes, then rain. Sauté onion until golden brown in margarine with bread crumbs, then coat your dumplings with the crumbs and onion. Serve instead of potatoes with pork chops, hamburg, etc.

1 medium potato, grated
2 eggs, beaten
2 cups flour
1 tablespoon salt
Large pot boiling water
Mix together potatoes, eggs, and salt to form a sticky dough. Put dough on a plate. Using a spoon or knife, push pieces of dough into large pot of boiling water. (Place spoon or knife into boiling water first to keep dough from sticking.) When dough comes to top, boil 10 to 15 minutes, uncovered. Drain and rinse with lukewarm water. Serve with goulash or paprikash.
