Salmon - Alice Kuhar's Recipes

SAVORY SALMON LOAF
(Treasured Slovenian & International Recipes Book)
Ingredients
1/2 cup Bread Crumbs salt & pepper to taste
2 eggs, slightly beaten 1/2 teaspoon sage
1/2 cup milk 2 teaspoon finely chopped onion
1 pound can salmon, flaked 1 tablespoon chopped parsley
1 teaspoon lemon juice 1 tablespoon melted butter
Directions:
Combine ingredients in order given. Pack firmly into buttered loaf pan and bake in 350 degree oven for 30-40 minutes. Turn out on platter and garnish with hard boiled eggs and sliced pickles. Serves 4.

SALMON LOAF

Ingredients:
1 pound or 2 cups can salmon 1 teaspoon salt
few grains cooked and flaked cayenne pepper
2 tablespoons melted butter or margarine
1 cup Bread Crumbs 1/2 cup milk
1 egg 1 tablespoon lemon juice
1 tablespoon minced parsley 1 tablespoon minced onion
Directions:
Preheat oven to 350 degrees. Grease shallow pan well. In mixing bowl, flake salmon in juice with bones if desired(nutritious and edible). Add crumbs, unbeaten egg, parsley, onion, seasonings, butter and lemon juice. Add milk to moisten. Mix lightly, but thoroughly. Add more milk if mixture doesn’t hold together. Shape into a loaf and put into a pan. Dot with some butter or margarine. Bake uncovered, until firm, about 45 minutes. Serve with creamed sauce or creamy egg sauce. Serves 4-6.

EASY SALMON LOAF

Ingredients:
1 pound can salmon bone & skin removed
2 eggs 3/4 cup mayonnaise
1/4 cup dried onions 16 saltine crackers, crushed
1 tablespoon Worcestershire sauce
Directions:
Mix all ingredients together and pour into greased loaf pan. Bake in preheated 350 degree oven for about 1 hour.

Sauce: 3 hard boiled eggs 1 can cream of mushroom soup
Chop eggs and mix with mushroom soup. Heat: pour over loaf after loaf is placed on a platter or pur some over slices as they are cut and served.

SALMON SLAW
Ingredients:
2 cans salmon 2 tablespoons grated onion
2 cups shredded cabbage 1/4 cup mayonnaise
1/4 cup chopped green pepper salt and pepper to taste
Directions:
Drain salmon: remove skin and bone. Break into pieces. Combine with remaining ingredients. Toss lightly and chill.
