Slovenian Barley Soup - Alice Kuhar's Recipes

1-1/2 to 2 lbs. smoked meat (either cottage ham,smoked pork chops, pork loin, smoked sausage or ham bone with meat)
1-1/2 cups medium pearl barley
1 tablespoon salt
1 medium sliced carrot
Few sprigs of parsley
1 medium diced potato
1 fresh tomato, quartered
1 medium onion
1 clove garlic
Wash barley thoroughly and drain. Place barley in a large soup pot. Add meat, carrots, potatoes, and salt. Cut a square of cheese cloth or clean white cloth and place parsley, garlic and onion in center of it. Gather edges together and tie securely with a string. Drop this bouquet garni into soup pot and add 2 quarts water, adding more if soup becomes too thick while cooking. Bring to a boil, lower heat then simmer for 1-1/2 to 2 hours. Soup will be thick.

*NOTE: This is a thick hearty soup and is excellent served with a thick slab of crusty homemade bread.
